Best Comfort Casserole
  • 1 1/2 lb ground beef, browned and drained
  • 2 onions sliced
  • 1 1/2 t salt
  • 1/2 lb cheddar cheese, grated
  • 2 cans mushroom soup
  • 1 1/2 soup cans milk
  • 1 8 oz package of medium sized noodles, cooked

Blend together and put into casserole dish.  Top with the following: 1 can chow mein noodles, several sliced green olives,  1/2 cup cashews. Spread on top and bake at 350 degrees uncovered. Retroessence hint: Serve with strawberry gelatin salad, warm rolls, and coffee.

Treasured Tuna Casserole
  • 1 cup cottage cheese
  • 1 cup sour cream
  • 2T finely minced onion
  • 2T chopped stuffed olives
  • 2T black olives
  • 2T worcestershire sauce
  • 2 cups cooked broad noodles
  • 2 cups tuna or other flaked fish
  • 1/2 fine bread crumbs
  • 1/4 cup parmesan cheese
  • 1T butter

Blend cottage cheese, sour cream, olives, and worcestershire sauce. Combine the cooked noodles, flaked fish, and the above mixture. Turn into buttered casserole dish. Top with bread crumbs, parmesan and dot with 1T butter. Bake in 375 degree oven for 30 - 40 minutes, until the casserole is bubbly and brown on top. Retroessence hint:Perfect for a quiet little supper - serve with green salad and garlic bread. For dessert, try chocolate fondue by the fireplace or by candlelight.   • 2 lbs steak, diced
  • onions, as many as you like, sliced
  • 2 cups noodles, cooked
  • 1 bunch of celery, cut

Brown meat and onion in butter. Put all in casserole dish. Pour  1 medium can of tomatoes over. Bake 1 1/4 - 1 1/2 hrs at 350 degrees.  Retroessence hint: Serve with warm biscuits and chutney or fruit conserve.
