Hot Luncheon Sandwiches

Having a hot lunch is something so simple and yet luxurious. In the '50's and '60's, there were many more one income families; kids often came home from school, and even hubby sometimes was able to come home from work. In 2007, perhaps the hot lunch will again become popular now that more people work from home. There are many wonderful vintage (and vintage repro) items available to create retroessence in the kitchen.

 

 


Barbecue Sandwiches
  • 1 lb ground beef, browned and drained
  • 1T mustard
  • 2T catsup
  • generous dash of pepper
  • 1 can chicken gumbo soup, with 1/2 soup can of water

Add mustard and catsup to browned and drained ground beef.  Add pepper. Blend above ingredients and then add chicken gumbo soup and water. Simmer for 1/2 hour. Add salt to taste and a little more water if needed. Serve on hamburger buns or kaiser rolls.  Retroessence hint: Get out the lazy susan and serve with relishes - pickles,carrot and celery sticks, radishes and potato or corn chips. If you don't know what a lazy susan is, ask your mother!

Hot Open Faced Spamwich
  • 1 can Spam
  • 1 8oz. package processed cheese
  • 4 hard boiled eggs
  • 1 onion

Food process or grind all together and mix with enough mayonnaise to hold. Spread on halves of hamburger buns and broil until cheese melts and sandwich is hot. retroessence hint:this is the perfect opportunity to use your melmac plates(the color of this print)Have lunch outdoors on the patio, and serve ice cold drinks in colorful aluminum tumblers.

Zesty Stuffed Rolls
  • 6 hard cooked eggs
  • 1/4 cup sweet pickle relish
  •  2t prepared mustard
  •  One 12 oz can corned beef
  • 1/2 cup mayonnaise
  • salt and pepper

Combine ingredients. Cut tops off hot dog buns. Hollow out slightly and brush inside with butter. Fill with egg mixture and put in ice box until just before serving. (That's what the recipes says!) Serve hot or cold.
